I boiled eggs for egg salad and found no mayo in the refrigerator. In my infinite wisdom, I turned to two unconventional condiment alternatives.
Steaming the eggs uses less water, takes less time and makes the eggs easier to peel.
Fill a small saucepan with about 1” of water. Add eggs. Cover with lid. Turn heat to medium. When water is boiling and steam coming out of the pan, steam for about 7-8 minutes.
Cool eggs and peel.
Add ranch, sriracha, celery, and all-purpose seasoning to a bowl with the eggs. Mash eggs with a fork, stirring together.
It's essentially buffalo-style egg salad, in which case buffalo not only have wings, but they also have eggs. Birds. Buffalo are now birds.
